In the heart of the ancient medieval village of Soave, at the foot of the Scaligero Castle, stands the palace of the Counts Sambonifacio, where the Cantina del Castello winery has been located since the 1960s. The Cantina del Castello winery is the only one that has maintained its production site within the medieval walls that delimit the historic center of Soave. This essential link with history is reflected in the philosophy of the winery that places research and loyalty to the tradition of Soave at the center of its production.
The very particular position of the winery, within a historic village, with the logistical problems that derive from it, has forced them to keep production limited, which is around eighty thousand bottles a year. Most of the production is expressed in the different nuances of classic Soave wines aged in various materials, in addition to the sparkling version and Recioto di Soave. Furthermore, since its origins, Cantina del Castello has also offered red wines from Valpolicella, such as Amarone and Ripasso.
As for the grapes used for the production of Soave (Garganega and Trebbiano), they all come from a single plot of land of 12 hectares, located right in the heart of Soave Classico: Monte Pressoni. In this area there are significant differences in altitude, the soils are clayey with basaltic skeleton, scarcely calcareous and weakly alkaline and are able to provide an optimal yield of grapes.
The wines and products of the Cantina del Castello winery are a true mirror of the territory, a combination of tradition and innovation where past and present meet giving life to a production that does nothing but enhance and valorize the characteristics of the Veronese territory.
