Grapes: Corvina 70%; Molinara 15%; Rondinella 15%

Vineyards located in the Valpolicella DOC area; at an elevation of 150-200 meters above sea level; Training system: Simple veronese pergola.

Alcohol: 15,5 % 

Size: 75 cl 

Production: Vintage: Hand-harvested with careful selection of grapes, between September and October. Only the healthiest grapes are chosen after reaching the perfect ripeness; Fermentation: After 3 months of drying in temperature and humidity controlled rooms, the grapes are pressed and the grape must is placed in small tanks at 18°-24°C, where a slow fermentation begins, lasting for 25-30 days. Finally, the must-wine completes fermentation in steel tanks at a temperature of 10°C. Aging: 24-30 months in oak barrels and 6 months in stainless steel. Bottle aging: 12 months.

Service temperature: 16-18 ° C. 

Description

Tasting Notes

Deep ruby red with garnet highlights. Intense fruit bouquet with hints of cherry, black cherry, wild berry fruit, vanilla, raisins and tropical fruit. Palate: full-bodied, warm, and smooth, with well
balanced, velvety tannins and impressively lengthy development.

Food pairings

Red meats, game and mature cheeses. Recommended also as a meditation wine.
