Qualification: Valpolicella Ripasso Classico Superiore DOC

Grapes: Corvina, Corvinone, Rondinella and a small percentage of other ancient vines.

Alcohol: 14.5% vol.

Size: 75 cl

Production and ageing: The most suitable grapes for this wine are harvested by hand, gently pressed and left to ferment for about ten days. After having rested peacefully for three or four months in concrete tanks, the Recioto and Amarone skins are still in the fermentation phase. Here it remains there for about 15 days refermenting, thus extracting polyphenolic substances and gaining in thickness, alcohol content and importance. It is then aged in medium toasted French oak tonneaux for about a year.

Tasting Notes

Intense ruby ​​red, with bright reflections tending, with aging, to an elegant old brick. Ripe fruit is the main scent on the nose: dried plum, cooked pear; then spices, such as pepper, softened by a balsamic and ethereal note. It leaves the palate satisfied with a wide range of persistent aftertaste and with a slight sensation of pipe tobacco and light spices. Good balance thanks to the round tannin, balanced by freshness and softness.

Food pairings

Due to its characteristics of pleasantness and structure, it can accompany winter first courses, main courses of meat, grilled meats, meats and medium-aged cheeses.
